 Midsummer Recipe
Lemon & Thyme Litha Cakes
Here is how you make them
Ingredients
1 x Lemon
3g tablespoon of Dried Thyme
50g Brown Sugar
120g of Plain Flour
10g of Baking Powder
85g of chilled unsalted Butter (cut into small pieces) 1g of Salt
3 x Eggs
25 Granulated Sugar
163 grams of Sour Cream
Instructions
Preheat your oven to 160C (Fan Oven) Mark 4 (Gas Oven) 180C (Conventional Oven)
Get a baking tray and put on greaseproof paper and lightly flour.
Zest the Lemon and put aside 1 teaspoon.
Cut your Lemon in half and squeeze out all the juice, until you have a tablespoon full.
Using your mortar and pestle crush up your dried thyme.
Mix together the thyme, lemon zest, brown sugar, plain flour, baking powder and salt in a large bowl. Then put your butter into the bowl, mix it all in till the mixture is almost like a crumble, then put to one side.
In a separate bowl, whisk 2 of the eggs, the sour cream and the lemon juice.
Pour the mixture into the bowl set aside and mix it altogether thoroughly.
Flour a surface,(keeping some nearby) and turn your bowl upside down onto the floured surface.
Kneed it slightly to make sure it is a doughy mixture, you may need to add some more flour, so it is not too sticky.
Divide the dough in half, flatten each half down into a circle.
Then using a floured knife cut six slices out of each circle (much like pizza slices).
Put your slices on the baking tray you prepared earlier, spacing your slices at least an inch apart.
Now take your remaining egg and separate the yolk from the egg white. Whisk the egg white until it's fluffy and foamy. Brush the foam over the top of your slices and then sprinkle over your Granulated sugar.
Pop it in your oven for about 20 mins or until they are golden on top.
Serve them warm, with some added cream on top.
